The Proper Chocolate Company, founded by Patrick and Kelli Marjolet in May 2016, is and one of only six in Ireland.
Our passion for chocolate making began in 2013 while living in San Francisco. Having received a bag of cocoa beans from a local small-batch chocolate maker as a gift, Patrick decided to try making his own chocolate and an intense passion ensued and endures.
Proper Chocolate Company chocolate is made from single origin, fair trade cocoa beans sourced from speciality cocoa bean suppliers around the world. Patrick and Kelli transform high quality cocoa beans into fine chocolate. As bean-to-bar chocolate makers they hand sort, roast, crack and winnow cocoa beans before they are stone ground into chocolate and their flavours are further developed and refined. They then age the chocolate and then refine, conch, age, temper, mould and package their chocolate for a minimum of two weeks. Once ready it is tempered, moulded and packaged.
Flavours include Salted Caramel Blond Chocolate, 70% Cocoa Nibs & Achill Island Sea Salt, Dominican Republic 70% Dark with Roasted Coconut and 75% Tanzanian Koko Kamili.
Special items for Christmas include a six bar ‘Makers Selection’ box and a Hot Chocolate Trio.
